Healthy Chocolate Muffins
3 eggs
2 ripe bananas
1 large zucchini, shredded with the skin
1/2 cup shredded or finely chopped carrots
1 tsp. vanilla extract
1 tablespoon melted butter
1 box chocolate cake mix
1/2 cup semi-sweet chocolate chips
Mix all ingredients together.
Bake at 350 for 20 min if baking muffins, or for 45 min if baking bread/cake
